Mexican Scrambled Tofu Faux-Eggs

These look EXACTLY like scrambled eggs, don't they? In some ways, they are more delicious! If you're craving eggs but they don't quite agree with you, you will LOVE this creative substitution!

It's an easy and fun recipe to make, and the secret ingredient to not only boost its nutritional value but to make the dish really look like eggs, is the ever-popular, anti-inflammatory, super-famous Turmeric!


Now, before I go into the recipe, I know that there tends to be a lot of confusion about whether or not soy products, including tofu, are actually a safe thing to eat, especially for women dealing with breast cancer. The reason is that soybeans contain estrogen-like properties and some oncologists are concerned that this issue could stimulate breast cancer to grow faster. Yet that issue is surrounded by a lot of controversy.


A recent study among women with breast cancer found that women who consumed products such as soy-milk, tofu, edamame, have a 32% lower risk of recurrence compared with similar women who consume little or no soy.


And for women who want to prevent breast cancer, researchers found that soy consumption cut breast cancer risk by 41 percent!


Some people promote soy products as a natural way to help combat hot flashes during menopause. Others say it isn't so, and it can be harmful.


So, as with everything else you choose to put in, on or around your precious and gorgeous body, if you have concerns, please do your research so that you can make your choice about whether or not to include soy in your diet. If you do, please make sure they are organic and non-GMO, and eat them in moderation. Soy is now one of the common GMO products out there, so read your labels, ok?


Soy products include tempeh (kind of like a burger consistency, which we love), miso for wonderful soups, sauces and dressings, tofu, edamame, and soy-milk. (I actually prefer home-made almond and coconut milk for reasons I've explained before, but basically, commercial soy milks can often have a lot of additives. Check ingredients label please.


Okay! Now that we got all of that out of the way... onward to the recipe!




1 package organic, non-GMO FIRM or EXTRA FIRM Tofu (other textures don't work well)

3 green onions diced small (or other onion, if you don't have green)

1 tsp. ghee (clarified butter) or coconut oil

1 c. cauliflower chopped small (optional - can substitute for chopped celery)

Small bunch of cilantro (not in photo, but really makes more Sexy-Mexi!)

Good salt

Turmeric powder (just enough to turn them yellow - or else flavor is too strong)


To complete the Mexican theme:

2 non-gmo corn tortillas

black or pinto beans (best are home-made, or Eden BPA-free canned)



  • Melt a bit of the ghee or coconut oil in a skillet.

  • Add onion and saute a minute. Add other ingredients the same way, one by one.

  • Drain water from tofu and crumble it by squishing it between your fingers over the skillet (this is the FUN part!)

  • Combine all ingredients. Stir a few moments to make sure flavors blend. Cover for about 5 minutes at medium heat to cook tofu.

  • Add chopped cilantro and salt to taste (go easy on the salt!)

  • Now add the Turmeric powder and watch the whole thing turn into scrambled eggs right before your eyes!

  • Warm up tortillas and beans. Place on dish and garnish with a bit of fresh cilantro.
